I have so many incredible memories of my visits to Dylan in Dublin, but two jump out immediately. My first memory of Dylan is when my father and I inspected the hotel days before it opened. We were so wowed by the rooms and style – as well as a junior member of the team named Barry who 10 years later is now the hotel’s manager! My second vivid memory is staying here with my wife Laura while we were dating. Yes, I chose Dylan because I really wanted to impress her. It worked!

The big news? For so long this has been a popular base for couples, but not as great an option for families as they did not have connecting rooms. All of this has now changed! Dylan has added a brand new wing to the hotel in the same brilliant and fun style. The new section of the hotel features interconnecting rooms that are perfect for families. We are so happy about these new 28 rooms that bring the total number of rooms at the hotel to 72! Finally a boutique hotel that caters for families! The additional rooms are furnished to the exacting Dylan standards while still maintaining that home from home vibe that Dylan prides itself in.

Now that we have sorted out a great place to sleep, no stay here is complete without a visit to their bar. Dylan teamed up with Teelings Distillery to create the “Teeling Me Softly” cocktail, a fresh and unique combination of lychee, fresh ginger, Teelings Whiskey and lime. This is just one of the many cocktails on their cocktail menu that Dylan is so famous for.  My personal favorite is their “Smokey Old Fashioned”. Dylan’s bar is one of the best places in Dublin to sip a cocktail and people watch, and it is immensely popular with locals. The bar extends to a beautiful outdoor terrace. If cocktails aren’t your thing, then visit Dylan Bar for the wine list alone.  Director of Operations, Oscar Navarro, has personally chosen each of the 128 wines personally and he loves nothing better than spending time with each guest to help them chose their wine. And, yes, they know how to pour a proper pint of Guinness.

Now that you have worked up an appetite, you have to enjoy their updated restaurant, Tavern. Menus are seasonal and constantly evolving and using of course only the finest local ingredients. Mark and his team keep their finger on the pulse of the newest trends in dining and love to offer guests something different and exciting. The Salt Baked sea bass for two and the Valhrona melting chocolate sphere showcases the theatrical side of their menu. Fish takes centre place on the menu and is from local suppliers and fresh from the seas around Ireland.  The result is an exciting expression of modern classics.
